What determines quality in IQF cauliflower?
- Floret sizing: Uniform sizes reduce overcooking and improve plating consistency. Define target size ranges (for example: small, medium, large florets).
- Blanching parameters: Time-temperature control impacts enzyme inactivation, color, and texture. Under-blanching risks off-flavors; over-blanching causes softness.
- Defect control: Specify limits for broken pieces, discoloration, and stem fragments.
