What determines quality in IQF cauliflower?

  • Floret sizing: Uniform sizes reduce overcooking and improve plating consistency. Define target size ranges (for example: small, medium, large florets).
  • Blanching parameters: Time-temperature control impacts enzyme inactivation, color, and texture. Under-blanching risks off-flavors; over-blanching causes softness.
  • Defect control: Specify limits for broken pieces, discoloration, and stem fragments.
  • Glazing: A controlled glaze protects against dehydration and freezer burn, but excessive glazing reduces net yield. Define an acceptable glazing range and verify net weight.
  • Frozen chain integrity: Temperature abuse can lead to larger ice crystals and texture breakdown.

For buyers, the best approach is to match specification to usage. Roasting applications may tolerate slightly larger florets; stir-fry and ready-meal lines often require strict uniformity.
